Since I'm in the process of making Potato Salad, I decided to add it to my blog :)
Potato Salad for a Crowd
1 (5 lb.) bag potatoes (I used Golden Yukon today.)
6 boiled eggs, peeled and chopped
1 + cup mayonnaise
1/4 cup sweet relish (more if you like)
1 tbs. onion, finely chopped
Salt & Pepper
Directions:
Wash, peel, and dice potatoes; boil in salted water until fork tender. Remove and drain. If you like a chunky potato salad, allow potatoes to cool completely. Return potatoes to pot and add other ingredients. Stir lightly until all of the potatoes are covered. Add salt and pepper to taste. If you like a sweeter taste, add a little sugar or even pour in a little sweet pickle juice.Refrigerate until ready to serve.
This is just like mine without the onion! And I add mustard.
