One reason that I love Fall is because of all the yummy foods that are made this time of year!
One of those is Sweet Potato Bread. This recipe came from my Memaw Helen, but I added cloves. She also cooks hers in tin coffee cans.
3 cups sugar
4 eggs
1 cup oil
2 cups cooked mashed sweet potato
2/3 cup orange juice
3 cups all-purpose flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1 teaspoon nutmg
1 teaspoon cloves
1 cup raisins
1 cup chopped pecans (optional)
Preheat your oven to 350 degrees.
In a large mixing bowl cream sugar, eggs, oil, and potatoes. Add the orange juice.
In a separate mixing bowl mix flour, soda, spices, raisins, and pecans.
Mix together the wet and dry ingredients. Mix with a hand mixer until smooth.
Grease three medium loaf pans with Crisco. Pour batter into pans.
Bake for 45 minutes to an hour. (Depends on oven).
This may seems strange, but this bread tastes better after setting. I still can't help but have a slice right out of the oven, but it seems more flavorful a day or so after baking :)

Glad you posted this! I am gonna make it, but without raisins. I have tons of sweet potatoes.
ReplyDeleteAfter I priced pecans, I didn't add them. Plus Elizabeth hasn't had nuts yet. They say this bread freezes well. I made a sweet potato pie too...Memaw's recipe.
